Late Monday Menu Post!

Well, I am late with this week's Monday Menu post. I was gone or taking care of some important matters most of the day yesterday. So, here is this week's menu and a little critique for you.

*My critique of Monday's dinner: I tried a different brand of taco shells, a different brand of sauce, and had made my own homemade taco seasoning...all failures! My hubby hated it all. Which made for a very tenseful (is that a word?) dinner last night. :(

UPDATE: Recipes and links are listed below. Although I did not get back on track with things last week...this is a new week 10/22 and it is headed to be a great one!!! Loving my life!

I am so hoping that this week gets back on track. Last week was such a busy week. My regular chores did not get done, my blog posts did not get put up. I am so a creature that craves structure. However, I did have a wonderful week though with my family. Taking care of one precious little 3 year old, and 3 different sporting events keep this grandma busy. But, this is another week and I am determined things will get back to normal around here!!!

Monday Menu: A day late! 10/8-10/14

I am back!!! Well a day late...I was still recovering yesterday from West Coast time. And, on top of having to do all my Monday chores...that is a heavy day for me....I had to grocery shop...which I do not normally do on Monday. So, I am back ready to get into my routines. I will have an Oregon post with lots of pictures later this week.

This is a very shortened week's menu cause I leave for Oregon bright and early on Wednesday morning. I will be gone for 10 days so I may not be updating my blog...but then again I may pop in and put up some things. I will not be however posting any of my regular postings while I am gone. This was the best meal by far all week!! Those glazed pork chops were absolutely delicious...and the sweet potatoes were wonderful! The yeast roll recipe is at my daughter's house. I will post it next week when I get it this week.

I was totally wiped out today after the events of the day. So we ordered pizza.

*Honey Teriyaki Chicken Legs
I used Ken's Honey Teriyaki marinade sauce to marinate the chicken legs for about 30 minutes. Then, I baked them for about 40 minutes. Sadly, the legs did not have much of a teriyaki flavor.
*Roasted Potatoes
Cut up red potatoes in chunks, sprinkle on some salt and pepper and some garlic seasoning salt. Then, put in oven along with the chicken legs and bake for about 40 minutes. Both of these were on 400 degrees.

*Lemon Brownies we had leftover birthday cake instead...look for these next week!

So sorry about this being late...with yesterday being a holiday I just totally forgot until I got in the bed and just decided I would put it up this morning.

*Shrimp Fettucini...really not a recipe...I sauteed the shrimp in some oil and butter, used a jar of Alfredo sauce and cooked some noodles...simple!!

Bacon Cheddar Grilled Cheese: these were sooooo yummy
*Tomato Basil Soup I thought this soup was missing a flavor but could not put my finger on what...my hubby thought it was delicious
*Molten Chocolate Lava Cakes w/Raspberry sauce...Cause I did not end up making them last week.: these were just so so...not even good enough to type out the recipe

Menus for the past couple of nights!

Here are the past couple night's menus...I will be glad to get back on track tomorrow with the Monday Menu posts...I will also be glad to get back on track with my cleaning schedule. I did so good the month of June and then life got really busy with the grandkids and summer and well I kind of fell off the wagon (the cleaning one that is). So, my schedule will pick up pace and get back to normal tomorrow...I will post my daily/weekly schedule another day this week. So here are the menus for Saturday and Sunday.



Saturday

Grilled Cheeseburger Wraps note: when I make these again I will leave out the lettuce, cause warm lettuce just turns me off. Also when I told my hubby what was for dinner he was not exactly thrilled but ended up loving them.
Home made french fries: I cut up a potato into small strips and deep fried in my fryer (a cost cutting dish) *upcoming post later this week about this


Sunday

Chili Slaw Dogs: there is nothing better to this Southern girl than a hot dog with chili and homemade slaw on top!! YUMMY!

Baked Beans: (another cost cutting dish)
Peach Praline Cobbler: this was delicious

Tonight's Dinner

Well tonight's dinner was really quick and easy! I had frozen the leftover chicken pot pie filling from the beginning of the month so I popped that bag in the sink to defrost, plopped on a pie crust (I cheated this time and used store bought) and threw it in the oven!! How easy is that? I made a BLT salad with a quick little homemade dressing, recipe below, and dinner was on the table in about 30 minutes. Kitchen is clean, hubby's lunch is made and in the fridge!





BLT Salad Dressing

1/4 cup mayo
1Tbs. balsamic vinegar
1t water
drizzle in a bit of olive oil while you wisk it together.
