Baking 101

Well our baking bread is going so so. We discovered after talking to each other that the bread eating is kind of one-sided. So for most of this morning we had a planning session instead of baking. Wish I had thought to take pictures of us planning. We made quite a long list both baking and crafting projects. We decided it was more than baking bread,  it was all about spending the time together. So, that is one of the reasons the title change and another reason well just because. This week's post is all about pumpkin bread and AmishWhite bread. And for the life of me I cannot find those pictures...so I will leave you with a link and the recipes used.

*neither of these are my pictures...mine are hopelessly lost where ever I saved them!

Monday Menus 9/10-9/16

Time for another weekly menu post! I am loving sharing these with you. Please take time to leave a comment and let me know if you are interested in seeing anything specific on my blog...either menu wise, craft wise, or otherwise!!

Monday
Country Fried Steak
Mashed Potatoes
Sauteed Squash and Onions

Tuesday
Meatball Subs
Chips

Wednesday
*Glazed Pork Chops
*Smashed Sweet Potatoes
Salad
*Yeast Dinner Rolls
This was the best meal by far all week!! Those glazed pork chops were absolutely delicious...and the sweet potatoes were wonderful! The yeast roll recipe is at my daughter's house. I will post it next week when I get it this week.

Thursday
Due to a grandchild sporting event we will be eating out tonight!

Friday
*Deep Dish Pizza Casserole
I was totally wiped out today after the events of the day. So we ordered pizza.

Saturday
Birthday dinner for Granddaughter

Sunday
*Honey Teriyaki Chicken Legs
I used Ken's Honey Teriyaki marinade sauce to marinate the chicken legs for about 30 minutes. Then, I baked them for about 40 minutes. Sadly, the legs did not have much of a teriyaki flavor.
*Roasted Potatoes
Cut up red potatoes in chunks, sprinkle on some salt and pepper and some garlic seasoning salt. Then, put in oven along with the chicken legs and bake for about 40 minutes. Both of these were on 400 degrees.
Salad
*Lemon Brownies we had leftover birthday cake instead...look for these next week!

Menu Monday: July 16-22

Well I have to apologize for the lateness of my menu posting. We went out to eat last night totally unexpected and I have been super busy today.  I also want you to know this is certainly not a typical type of menu for me...I am trying to use up everything that I have on hand. Please keep me in your thoughts...I had an MRI this morning on my right knee and it seems there is a torn meniscus...seeing the ortho doctor on July 31. Not sure what will happen but it is in God's hands. Now on to this week's menu

Check out my commentary on last week's meals! Hope you can find something you will enjoy!!

Here is this week's menu. Up a bit late but it is still Monday!! I would LOVE if you would take the time to make a comment or two! Let me know how you are liking the menus.

Monday
Roasted Potatoes
Broccoli w/Cheese sauce
The chicken was really delicious. Easy too!

                                                    Tuesday
                                                      Pulled BBQ Pork Sandwiches
                                                   Corn on the Cob
                                                 *Macaroni and Cheese
                                                 sliced cucumbers
*Toasted Pound Cake w/Strawberries and Peaches
Mac and Cheese was a bit floury tasting for me but the family loved it. I am still on a quest though to find another recipe for making this well-loved dish from scratch now that I am a SAHW.
Dessert was superb and a good one for just two people cause you make individual servings...I used Cool Whip though instead of ice cream as the recipe calls for.

                                                     Wednesday
                                                       *Salisbury Steak w/Onion Gravy
                                                      Mashed Potatoes
                                              Peas
                                             Rolls
                                          *Peach Cobbler
An absolute delicious meal!! The onion gravy was a bit time consuming to make though. Peach cobbler did not taste as good as the last one I made, I think this was due to the type of peaches, they were white flesh peaches and we did not care for them at all.

                                          Thursday
                                        Tacos
                                       Yellow Rice

                                        Friday
                                       Pizza
                                       Salad

                                        Saturday
                                      *Marinated London Broil
                                      *Fried Green Tomatoes
                                       Baked Potatoes
                                       Rolls
                                   *Lemon Delight
Oh my goodness shut the front door!!! This meal was absolutely the best of the week. The London Broil was cooked to perfection by my lovely husband....and those fried green tomatoes (I had never had them but hubby loves them) were just wonderful!! I also had 2 yellow squash and a zucchini I needed to use before they went bad so I sauteed them up with some onion. We were so stuffed that is why I crossed off that dessert.

                                  Sunday
*Best Ever Burger Recipe (using ground chicken)
                                     Home Fries
                                  Salad
We had leftovers from Saturday....I added a tossed salad and made twice baked potatoes from the one leftover. Another great meal!

Menu Mondays:Critique/Recipe Update

Here is my update with recipe links posted and a critique of each night's meal. I will use a different color text below the days of the week for that day's critique. I hope this gives you some inspiration!! Please leave me some comments and feedback on what you like and would like to see in the future!

Well as promised here is the menu for this week! Now, since this is my first total week posting of the weekly menu I want to make a disclaimer...often times things do not go as planned here at the Russell household and  daily menus get bumped due to unforeseen events happening. Most of the time those things include either an unplanned going out to eat (which has seriously been cut back lately) or getting invited over to the kid's houses to eat...which does happen quite frequently!! So without further adieu here is what the Russell's are eating this week!

                                                                           Monday
Ore Ida Grillers
Squash
The burgers were not as good as they could have been cause they were not cooked on the grill. I do believe cooking them on the grill they would have been fantastic! My hubby absolutely LOVED the pea salad. This is something I thought he might not have liked.

Tuesday
(not sure what the hubs is eating, cause, daughter and I and 2 of her kiddos are going to the Fireworks in the park and having a picnic supper) MEN! sometimes they are such party poopers!!

Brownies w/4th of July Sprinkles
*Raspberry Lime Rickey
Had a really nice time in the park. The fireworks were fantastic and the kids loved it. Chicken salad was just not to my liking, will not make that again. Summer Corn salad was fabulous!! And the beverage...lots of work, but well worth it!!

Wednesday: 4th of July
BBQ Chicken
Corn on the Cob
Rolls
Red Velvet Cupcakes 4th of July Style
*Patriotic Pound Cake Trifle
The macaroni salad was the hit of the cookout!!! Everyone...well almost everyone...1 person picked out the celery...loved it. And my daughter made the pound cake trifle it was beautiful! Picture below!

Thursday
Chicken Caesar Salad
*Cheesy Bread
Bread was great!

Friday
*Lemon Delight
First time ever making sloppy joes from scratch...wow...they were super!!! Will definitely use this recipe again. Second time I made the fries and not sure what I did wrong this time but they were so much better the first time I made them. Well worth your time though!

Saturday
Hawaiian Pizza
*Spinach Salad
Pecan Pie (store bought)
mainly cause it was on sale and I could not make it for that price
Jamie has a great food blog! Love her recipes and this spinach salad is fabulous!!

Sunday
Meatloaf
Garlic Mashed Potatoes Rice w/gravy
Green Bean Casserole
Rolls
*Southern Peach Cobbler w/Vanilla Ice Cream
We needed some comfort food on this lazy Sunday afternoon and I needed a break from using so many recipes. LOL! We had leftover Pecan Pie so we will have peach cobbler later this week.

**Critiques with Recipe Links will always be posted the next Monday as an update to this same post.

Tonight's Dinner...a sneak peak at Menus and Recipes to come.

So I thought I would give you a little sneak peak at the recipes and tonight's dinner menu so you can have a hint of what is to come each week.

Critique of Recipes and Comments from the Fam!

The Italian Cream Chicken calls for Corn Flakes. Well at our house we don't eat plain corn flakes but we do eat Ritz Crackers so I substituted crushed Ritz Crackers for the coating on the chicken. Fabulous!! Okay...I struggle with making too much food for just my hubby and I. Tonight it so happened that my son came over for dinner due to his wifey being out of town. So, I fed 3 tonight. Well, I still took the sauce recipe and cut it in half and it was more than plenty for us + 2 servings left over...lunch for both hubby and I tomorrow. Comments: Everyone loved it!!!

The Zucchini Parm crisps could have been a bit crisper! The recipe said to bake them for 22-27 minutes and I took them out at 23 minutes...and the oven was set at the recipe instruction of 400. Well, I definitely would leave them in for the whole 27 min. and would amp up the temp of the oven to 425. Comments: I loved them although a bit crisper would have been nice. Son liked them okay. Hubby: "We have been married 37 years and when have you ever known me to eat zucchini?" So, he wasn't a fan of them.

Thursday Night Dinner

Italian Cream Chicken

Parmesan Zucchini Crisps

I love this blog...Jamie has so many wonderful recipes!!
Take a few minutes after viewing the recipe to take a look around!
Note: not my photo....taken from Jamie's blog. We did not have asparagus with dinner tonight!

Tune in next Monday for next week's menu!

New Feature of My Blog Starting on Monday!

I plan to start a weekly menu post every Monday of the upcoming week's menu. Then the following Monday I will come back and critique the recipes and meals posted. I will try my best to post photos, although I am not the best food photographer. LOL! I will however post recipes with links and credits to where I obtained the recipe. So be on the lookout for Monday's menu post. Thanks for sticking with me and reading my posts. Please take a few minutes to "follow" my blog or leave a comment.

I Don't Pin these Recipes for Nothing!

Well, we had another winner recipe for dinner thanks to my Pinterest Obsession. I have spent lots of time on Pinterest pinning recipes and categorizing them for various boards. I like to be able to find EXACTLY what I am looking for so my boards on Pinterest are very specific...Entrees, Side Dishes, Desserts, Cupcakes (they get their own board), breakfast, I even have a soup board. I even like to make notes as to when I plan to use the recipe in the comment section when I pin it. If you would like to check out my Pinterest boards just click on the P on the flag banner over on the left side.  Anyway I digress...sorry.

Tonight we had two of the recipes I had pinned recently. I had planned to have these for Sunday dinner a couple weeks ago but for some reason or another we never had it so tonight was the night for it. I was off work today and had the energy to cook up some yummy food for us tonight.

I cooked Shrimp and Grits and this great little salad (Tomato/Cucumber Salad) I thought would be a good choice for a side. Well unless you have a super picky hubby it would be fabulous. His comment was...."I would rather have just plain cucumbers sliced in vinegar and sliced tomatoes....without all that onion." Sometimes I just wish I could make whatever I want without having to think about will he like it. But really I would not have it any other way. I love pleasing my husband with food and 99% of the time do think about him and what he would like or not like.

I browse lots of different sites looking for recipes and am usually not original myself at creating recipes. So, I always want to give credit where I get them from. The Shrimp and Grits came from here. And the tomato/cucumber salad from this site. Have fun browsing and I hope I have inspired you to cook up something yummy for your hubby.

All was really delicious!
