Menu Mondays: July 9-15

Roasted Potatoes
Broccoli w/Cheese sauce
                                                       The chicken was really delicious. Easy too!

                                                 sliced cucumbers
                                                   *Toasted Pound Cake w/Strawberries and Peaches
Mac and Cheese was a bit floury tasting for me but the family loved it. I am still on a quest though to find another recipe for making this well-loved dish from scratch now that I am a SAHW.
Dessert was superb and a good one for just two people cause you make individual servings...I used Cool Whip though instead of ice cream as the recipe calls for.

An absolute delicious meal!! The onion gravy was a bit time consuming to make though. Peach cobbler did not taste as good as the last one I made, I think this was due to the type of peaches, they were white flesh peaches and we did not care for them at all.

Oh my goodness shut the front door!!! This meal was absolutely the best of the week. The London Broil was cooked to perfection by my lovely husband....and those fried green tomatoes (I had never had them but hubby loves them) were just wonderful!! I also had 2 yellow squash and a zucchini I needed to use before they went bad so I sauteed them up with some onion. We were so stuffed that is why I crossed off that dessert.

We had leftovers from Saturday....I added a tossed salad and made twice baked potatoes from the one leftover. Another great meal!



Menu Mondays:Critique/Recipe Update

Here is my update with recipe links posted and a critique of each night's meal. I will use a different color text below the days of the week for that day's critique. I hope this gives you some inspiration!! Please leave me some comments and feedback on what you like and would like to see in the future!

Well as promised here is the menu for this week! Now, since this is my first total week posting of the weekly menu I want to make a disclaimer...often times things do not go as planned here at the Russell household and  daily menus get bumped due to unforeseen events happening. Most of the time those things include either an unplanned going out to eat (which has seriously been cut back lately) or getting invited over to the kid's houses to eat...which does happen quite frequently!! So without further adieu here is what the Russell's are eating this week!

The burgers were not as good as they could have been cause they were not cooked on the grill. I do believe cooking them on the grill they would have been fantastic! My hubby absolutely LOVED the pea salad. This is something I thought he might not have liked.

Tuesday
(not sure what the hubs is eating, cause, daughter and I and 2 of her kiddos are going to the Fireworks in the park and having a picnic supper) MEN! sometimes they are such party poopers!!

Had a really nice time in the park. The fireworks were fantastic and the kids loved it. Chicken salad was just not to my liking, will not make that again. Summer Corn salad was fabulous!! And the beverage...lots of work, but well worth it!!

The macaroni salad was the hit of the cookout!!! Everyone...well almost everyone...1 person picked out the celery...loved it. And my daughter made the pound cake trifle it was beautiful! Picture below!

First time ever making sloppy joes from scratch...wow...they were super!!! Will definitely use this recipe again. Second time I made the fries and not sure what I did wrong this time but they were so much better the first time I made them. Well worth your time though!

We needed some comfort food on this lazy Sunday afternoon and I needed a break from using so many recipes. LOL! We had leftover Pecan Pie so we will have peach cobbler later this week.

Tonight's Dinner...a sneak peak at Menus and Recipes to come.



So I thought I would give you a little sneak peak at the recipes and tonight's dinner menu so you can have a hint of what is to come each week.

Critique of Recipes and Comments from the Fam!

The Italian Cream Chicken calls for Corn Flakes. Well at our house we don't eat plain corn flakes but we do eat Ritz Crackers so I substituted crushed Ritz Crackers for the coating on the chicken. Fabulous!! Okay...I struggle with making too much food for just my hubby and I. Tonight it so happened that my son came over for dinner due to his wifey being out of town. So, I fed 3 tonight. Well, I still took the sauce recipe and cut it in half and it was more than plenty for us + 2 servings left over...lunch for both hubby and I tomorrow. Comments: Everyone loved it!!!

The Zucchini Parm crisps could have been a bit crisper! The recipe said to bake them for 22-27 minutes and I took them out at 23 minutes...and the oven was set at the recipe instruction of 400. Well, I definitely would leave them in for the whole 27 min. and would amp up the temp of the oven to 425. Comments: I loved them although a bit crisper would have been nice. Son liked them okay. Hubby: "We have been married 37 years and when have you ever known me to eat zucchini?" So, he wasn't a fan of them.

New Feature of My Blog Starting on Monday!

I plan to start a weekly menu post every Monday of the upcoming week's menu. Then the following Monday I will come back and critique the recipes and meals posted. WOW! What a Start to being a SAHW!

This has been a whirlwind last few weeks. I have been a cleaning monster for the past several weeks, then this week I kind of hit a wall and it has taken me all day to do my "chores." I hope to get back on track next week. We will have a much needed family break this weekend. Hubby and I are joining my daughter and her 3 children at the beach for a 3 day weekend. Could not believe I actually talked my hubby into taking tomorrow off work. So next week I am going to get on a schedule!!! I also have neglected my blog lately mainly because I was going to go back and reread some tips and hints that my blog designer over at Blog Designs by Sheila gave me. Well to no avail one of the things I accomplished first after school got out was to clean out my inbox in my email. I carefully labeled things and put them in folders that I wanted to keep...fast forward to today and low and behold that folder is empty! YIKES! So I guess I will email Sheila and beg for some assistance.

One reason for taking so long to complete chores this week is I have been taking this course over at Jessica Sprague's website. She offered a free Photoshop class for her 5th Birthday Celebration and I signed up. I have taken many classes over at her site and absolutely love them...so easy to follow. So if you have Photoshop or Photoshop Elements I would recommend some of her classes.

Another thing that I have neglected was to send out the prizes for the comments on My New Design post. Some of you I know how to get in contact with and some I do not. If you were someone who commented...no matter what # please send information of how I can send you a little surprise.

Hopefully, I will begin to update my blog and let all of you readers know how my adventure of being a SAHW is progressing. Please, please, please though do a favor for me...when you come to my blog and read the post please take the time to make a comment. I sooooo enjoy reading the comments and it encourages me and lifts my spirits. They just make my day!!
